if the kale is fairly young/tender we'll cope, otherwise we tend to skip. We slice it thinly, saute it in butter (or bacon fat), squeeze over juice of a lemon add the zest and cover to let it steam. Adding water if necessary

If you roast a chicken, render out the tasty fat and cook your kale in that. Yum...Also, if you get tender Italian style kale, tear it in pieces, run over it with a rolling pin, and make a honey mustard dressing for it. Fresh blueberries or cut up stone fruit make an excellent salad. You'll forget it's healthy.
